St. Lucia Day is a Swedish holiday on December 13th. Because of the long, cold, dark winters, Swedes welcome this holiday of light. Legend tells us of a lovely, Christian girl from Sicily who risked her life in order to feed the persecuted Christians who were hiding in the catacombs. Because her tray was so filled with provisions, she needed to put candles in a wreath on her head to light the way. We remember this holiday by dressing up in a long white nightgown, with an artificial crown of lights on our heads and pepparkakor for each child.
Pepparkakor Cookies (Ginger Cookies)

Ingredients:
1 cup softened butter
2 Tbsp dark corn syrup
1 egg
2-4 Tbsp heavy cream
3 1/4 cups flour
1 1/2 cups brown sugar
2 tsp baking soda
3 tsp each of ginger, cinnamon & cloves
Directions:
- Preheat oven to 350 degrees.
- With a dough hook, mix together the ingredients.
- Refrigerate overnight.
- Roll and cut into heart shapes. Place on greased cookie sheets or cover cookie sheets with parchment paper.
- Bake at 350 degrees for 10-15 minutes. Cool and then decorate.
